Directions
Preheat oven to 350F.
On a cookie sheet, add the carrots and extra virgin olive oil, and roast for 12-15 minutes or until tender.
In a blender, add the roasted carrots, the remainder of extra virgin olive oil, and water. Pulse until everything is fully incorporated into a mixture.
Add the Classic Hummus and blend until smooth.
Recipe Note
Garnish with your choice of a drizzle of evoo, pine nuts or a delicious olive tapenade. Serve with fresh veggies or warm pita and enjoy!
